I would use weight or custom curves depending on the situation. I usually use limits or center point changes on the servo page for physical limits to servo movement.
Because there are often more than one way to do things, you should settle on your own "best practices" . It makes it easier to figure out what you were thinking when you programmed a model two years ago and need to change it.
